I added chopped sweet potatoes this time. I also think I might use less liquid and use it as a stew over brown rice. Thanks for this one it is a keeper! I made the creamy tomato and squash pasta and bought your book about 10 seconds after. Especially for someone who pre-makes meals it was very quick and stays well in the fridge. Im gonna become a vegetarian in and I have no clue what I can have for dinner because the rest of my family are meat lovers and this was very helpful for me to start out.

These open-faced egg toast beauties are much more than your average egg salad sandwich—the flavors, textures, and even look are elegant and original. Folded into the egg salad mixture is a mustardy vinaigrette, briny capers, fresh parsley, and just-bitter-enough radicchio leaves.
Heaped on top of toasted sourdough, the result is both fresh and hearty, a win-win! This mixture would also be delicious piled on a whole grain like brown rice or quinoa, or even served as a salad for a lighter meal. The toppings here are mostly classic: melted mozzarella and crispy coins of pepperoni, but the red sauce has a twist: a couple of tablespoons of heavy cream, which makes this even richer than normal.
Top it off with rounds of red onion and it's becomes an unforgettable pie. Before serving, sprinkle some crushed red pepper and dried oregano, or serve both on the side and have everyone sprinkle their own. There are a few reasons why this delicious grilled halloumi cheese salad is going to become your summer dinner fave. Second, it hits all the right flavor notes, from briny olives to spicy garlic and cool, crunchy cucumbers.
But, the most important reason to make this salad is to eat grilled halloumi, a firm cheese that can stand the heat of a grill or grill pan. The taste is salty like feta, but you can cut into the planks of crispy, melty cheese with a knife and fork like you would tofu or a portobello mushroom. Get the recipe : Grilled Halloumi Salad. Lo mein—a Chinese dish that means stirred noodles—is a standard takeout order for many Americans, but making it at home is an opportunity to not only expand your culinary repertoire, but to cut down on expensive delivery.

Top the pasta with kale, chopped roasted almonds, and pecorino cheese. Especially you. Plenty of choice chili recipes require you to simmer the pot for an hour or two. But with just slightly more planning, you can cook up this tasty frittata, packed with yellow onion, red potatoes, chorizo sausage, and Manchego or cheddar cheese—in half an hour and in a single skillet.
Expect this filling omelet to become a comfort-food fixture in your kitchen. And just so you know, leftover slices are fantastic for lunch. This dinner looks like it took time and plenty of effort, right? Toss the parsnips, cherry or grape tomatoes, and scallions with thyme and olive oil, and roast the mixture until tender. Halibut and quick-cooking mussels are the stars of this rich, fragrant meal-in-a-bowl. Crusty bread makes a great addition, too. Some quick and easy dinner ideas require little chopping, or just a single pan, or even very little cooking. In this case, all the ingredients cook in the oven, which makes for very little prep—and very few dishes to wash.
Dinner Tonight: Quick and Healthy Menus in 45 Minutes (or Less)
Start with four pieces of skinless cod halibut or striped bass fillet work nicely, too , which is topped with strips of lemon zest and roasted alongside scallions and sliced red potatoes, coated in olive oil and chili powder. Thin, crispy slices of pork and a crunchy, zesty salad made with chickpeas, sliced fennel, celery, red onion, and a quick lemon dressing provide a great point and counterpoint in this easy supper idea.
And that breaded crust? Give dinnertime a tropical flair with this lively salsa made with fresh mango, scallions, lime juice, and crushed red pepper. Chop up the ingredients and mix the salsa up first thing; then set it aside to let the flavors meld a bit while you prep the pork tenderloin, which gets cooked under the broiler in just 12 to 15 minutes. Plate the salmon over a bed of rice next to your green vegetable, and voila. Carrots, onion, diced canned tomatoes, green beans, chicken broth, and fresh parsley combine to flavor this easy-to-make lamb stew, which feels so right in spring—but proves delicious and warming in fall and winter, too.
